Sometimes you just want a warm, hearty, one pot soup. Something that’s rich, filling and feels like a hug for dinner. Lasagna Soup is just that soup. I made mine gluten free and plant based so that everyone in the family can enjoy it during a meat or dairy meal. This recipe is based upon the Lasagna Soup recipe from The Spruce Eats. Ingredients have been changed to accommodate dietary needs. Here is an incredible recipe for Sweet Potato Soup with Candied Pecans that I developed several years ago for our Thanksgiving feast. I liked the idea that it was made with seasonal, fresh, hearty ingredients. With a dollop of fresh (pareve) whipped cream, topped with crunchy sweet pecans, this soup is always a family favorite. This is one of my favorite weeknight dinner soup. Quick to prepare, filled with healthy baby bok choy, and hearty enough for a meal. I make enough for leftovers for perfect weekday lunches. A few simple ingredients create this beautiful, flavorful soup. Pumpkin Soup and Kibbeh is a fabulous fusion dish that combines the creamy, earthy flavors of pumpkin soup with the savory, Middle Eastern spiced goodness of kibbeh. The soup itself is a velvety blend of pureed pumpkin, gently simmered with aromatic spices like cinnamon and nutmeg. The warmth of the spices in the Kibbeh complements the earthy sweetness of the pumpkin, resulting in a soup that is both comforting and satisfying. Fusion is FUN! Porcini Mushroom “Barley” Soup is absolutely one of my favorite “Shabbos Under Pressure” recipes. Packed with savory mushroom flavor, this take on the traditional mushroom barley soup is made gluten free by using short grain brown rice instead of barley. Those used to mushroom barley soup can’t even tell the difference! Roasted Brussel Sprout Soup gets its rich flavor from slow roasting the Brussel sprouts with carrots, potatoes and green onions. Seasoned with fragrant dill, herbs and spices, this is the perfect heart warming soup. Plant Based Hamburger Soup is a hearty, savory, flavorful healthy and filling soup. The bright carrots, rich diced tomatoes, and short grain brown rice, create a tasty thick broth with delicious chunks of plant based browned hamburger. It’s perfect for dinner and a great leftover lunch. You can make it on the stovetop or in your Instant Pot. This recipe is plant based and gluten free. Roasting the cauliflower brings out its rich flavor for a healthy, twist on traditional onion soup. You can add fresh mozzarella and croutons to make it extra special. If you do use another type of cauliflower (purple, green, orange), make sure to adjust the roasting time — they take less time to roast. Vegetabley Vegetable Soup is perfect for those cold winter days when you’re craving a warm and healthy soup, or when you need all the boatload of vitamins and minerals found in the tons of fresh, nutritious veggies in Vegetabley Vegetable Soup!Lasagna Soup – Plant Based & Gluten Free
