Just think about blending your favorite fruits with a hint of mint and a splash of citrus, and you’ve got yourself a delicious, chilled soup that’s perfect for any summer occasion. It’s like summer in a bowl, blending sweet and tangy fruits into a chilled, vibrant soup that’s as beautiful to look at as it is to eat.
Fresh Fruit Gazpacho
There are recipes that I’ve been making for a long time, many are great as is, but others could use a refresh. Way back on June 19, 2011, I published a recipe called “Summer Fruit Soup” on the Blogger platform. When I came over to WordPress, we brought the recipe along. It’s an incredibly refreshing summer soup, but back then, I didn’t give a lot of specifics for the ingredients, leaving it up to the reader to decide. For Fresh Fruit Gazpacho, the ingredients are way more specific, the texture of the soup is a little “chunkier” as a gazpacho, and I included the mint, lime juice and lime zest inside rather than using it as a garnish.

You can see all the chunky goodness in this gazpacho. It’s more fun and delicious to enjoy it this way!
The result is a super refreshing summer treat, that uses up the leftover watermelon, cantaloupe and mango that everyone always has in their fridge during the summer months (but we just can’t eat another piece!). While I used those particular fruits, you can substitute your favorites as well. As the Google AI so eloquently said “Remember, gazpacho is forgiving. It’s like a canvas—you’re the artist, and your ingredients are the colors. So go ahead, create your masterpiece! 🎨”
Making Fresh Fruit Gazpacho
My goal in creating the new Fresh Fruit Gazpacho recipe was to develop a recipe that is easy to replicate and make it your own if you choose. I wanted to have a more textured soup, where you could actually have pieces of fruit – like a traditional gazpacho. Rather than “pulverizing” the fruits, I pulsed the fruit so as not to over process it. They looked like this:

Note how you can still see pieces of watermelon rather than having it finely ground? This is what makes it more of a “gazpacho” rather than a soup. If you’d prefer a soup, then process away!
Adding the lime to Fresh Fruit Gazpacho
The original recipe calls for “lime juice to taste”. While that might work for me, it doesn’t for everyone. I also added some lime zest to the recipe to give it that zesty punch of refreshing that lime brings to a recipe.

If you live in Israel, I’m really sorry. You can use green lemons, regular lemons, or bottled lime juice (if you can find it). When I was in Israel for a month when Dear Grandson was born I found out, while publishing “Pomelo and Avocado Salad with Lime Dressing and Mazel Tov!” THERE ARE NO LIMES IN ISRAEL! When I go visit the next time we’re going to plant lime trees. True story!
The Mango Juice
In addition to the fresh chopped mango, there’s also mango juice in the recipe. This helps to make it a gazpacho rather than a salsa (thank you Adam). I used one carton of Ceres Mango Juice. It’s around 33 ounces. You can use any juice you like in this recipe (not lemon or lime though) to create your favorite flavors.

As I always say: You are the Executive Chef in your kitchen. While I recommend a watermelon and cantaloupe base, you really can use any fresh fruit you like. If you use fruit like peaches, I strongly recommend peeling them before you add them to the gazpacho 😉

Ingredients
- 6 cups diced cantaloupe, around 1/2 a large cantaloupe
- 2 cups diced mango, around 2 large mango
- 8 cups diced seedless watermelon, around 1/2 a small watermelon
- 2 (3-ounce) boxes raspberry or strawberry gelatin, can be sugar free (1.7 -ounce)
- zest of one lime, around 1/2 tablespoon
- 1/4 cup fresh lime juice, around 2 large limes
- 1/2 cup fresh mint leaves, chopped, plus more for garnish
- 32–34 ounces mango juice
- additional thinly sliced lime slices for garnish
Instructions
- Place the cantaloupe cubes in the bowl of a food processor. Pulse until coarsely chopped. Transfer to a large bowl. Repeat with the mango. Process the watermelon with the gelatin, pulsing until coarsely chopped, being careful not to overprocess. Do not process the cantaloupe, mango and watermelon together. They can all be added to the bowl once they are individually chopped. You do not have to clean the processor bowl in between chopping each fruit.
- Add the lime zest, lime juice and fresh mint leaves. Stir to combine.
- Pour in the mango juice, stirring until all the ingredients are evenly distributed.
- Cover and refrigerate for at least an hour.
- Serve chilled Fresh Fruit Soup garnished with fresh mint leaves and lime slices.
- Can be made up to two days in advance.

Feel free to add your favorite flavors to this gazpacho. I do recommend having the cantaloupe and/or watermelon as a base for the gazpacho.
Make sure not to over pulse the fruits. You want to make sure they are chunky not liquified.
