Pizza Cones
I’ve been doing some Instagram lurking. It’s really a time vacuum cleaner. I can start and then three hours later, I’m like “where did three hours go?”. However, some good did come from all that lurking – I found an awesome video for making Pizza Cones on @healthyeatgram on Instagram.
She does an awesome job showing how to make the pizza cones. I wondered if I could make them gluten free, with different ingredients. Here’s what happened.
Making Gluten Free Pizza Cones
The first thing I had to do was find gluten free tortillas. I wasn’t sure what would happen, so I chose a few different tortilla brands to make the cones.
Stick with the Mission Gluten Free Tortillas
I tried to use a fancy brown rice tortilla and this is what happened…Rice Tortilla Cones just didn’t work. They fell apart when I tried to shape them. I did try to warm them before folding them, but it didn’t seem to help. Stick with the super soft Mission gluten free tortillas.
Spray the Cones
I found that the tortilla cones had to be baked a little longer than what was specified in the original IG reel for crispier cones, and spraying the cones with non-stick spray really helped them to crisp. In the end I think that 10-12 minutes should do it. For crispier cones, max out at 15 minutes.
Adding foil to the bottom of the casserole dish
I scrunched up some foil on the bottom of the casserole dish to help keep the Pizza cones in place while they were baking. The divots in the foil held the Pizza Cone bottom tips in place while they were baking. I had to add a second piece in the middle after the outer cones were filled to hold the middle Pizza Cones in place. It worked really well and I highly recommend doing it.
Different ingredients and toppings
This is one of those “You are the Executive Chef in your kitchen moments. I used a variety of cheeses in my cones, fresh mozzarella balls, marinated fresh mozzarella, grated parmesan and traditional part skim mozzarella.
Fillings included Beyond Burger vegan breakfast sausages, sauteed mushrooms, red and green pepper. I sauté the mushrooms first so they release all their liquid before putting them in the cone. The flavor is also a little richer.
You obviously could use whatever cheese and fillings you like. If you’re making these for a few/more people, you could make a Pizza Cone Bar where everyone can choose what they want in their cones.

Here’s the recipe for Gluten Free Pizza Cones
Normally I would give you nutritional information for each Pizza Cone. I’m not going to here. Mostly because it’s dependent upon which tortillas you use (even though I strongly recommend the Mission brand), the type of cheese you use, and the stuff you stuff inside.You are the Executive Chef in your kitchen. Ingredients
- 6 (gluten free) large round tortillas
- 1 cup pizza sauce (around)
- 8 ounces of cheese (see note)
- pizza toppings – diced peppers, olives, sauteed mushrooms, vegan sausage, broccoli, etc.
- non stick spray
Instructions
- Preheat oven to 350°F or 325°F convection. Line a baking sheet with parchment paper. Set aside.
- Cut the tortillas in half.
- Form cones, closing each with a toothpick.
- Place the cones open side down on the prepared baking sheet (like little teepees). Generously spray with nonstick spray (PAM) and bake for 10-12 minutes. For extra crunchy Pizza Cones bake for 15 minutes.
- Remove from oven and allow to cool slightly.
- Take a large sheet of aluminum foil and scrunch it to fit in an oval casserole dish, then place it in the casserole dish (to hold up the tortilla cones).
- Take a cone and spread some pizza sauce in the center. Layer cheese and toppings ending with cheese. Carefully set in the prepared casserole dish, starting on the casserole edge.
- Repeat with the remaining Pizza Cones. If necessary add an additional piece of scrunched foil to hold the center cones steady.
- Bake for an additional 15 minutes until the cheese is completely melted and gooey.
- Remove the toothpick from the cones! Serve hot.
- If there are leftovers they can be stored overnight to be eaten the following day.

I used a combination of fresh mozzarella balls, marinated mozzarella (from Aldi), shredded part skim mozzarella, and aged parmesan. I found that layering the cheese and toppings worked best, and sprinkled some of the parmesan on top of each before baking.
If using mushrooms, slice/dice them and sauté before adding to the Pizza Cones for best results.
You can have a super fun Pizza Cone bar and have everyone make their own pizza cones with their favorite cheeses and toppings.
I strongly recommend using a very soft tortilla for best results.
To make this plant based substitute plant based cheeses for the dairy cheese. It won’t melt as well but it will be vegan.
