Wild Mushroom Truffle Pizza – very very truffley
Wild Mushroom Truffle Pizza is insanely, deliciously, truffley and mushroomey. If you love mushrooms this is the pizza you’ve been waiting for! There’s truffle powder blended into the crispy crust, and truffle oil brushed over the baked crust as well. The wild mushrooms are even sautéed in truffle oil! I made this pizza gluten free and plant based however If you’re not a GFE (Gluten Free Eater) or prefer dairy cheese then you can use regular flour or dairy pizza cheese instead.
Why Wild Mushroom Truffle Pizza
My love for mushrooms is a well known factoid, so by extension it shouldn’t be a huge leap to comprehend my relationship with anything truffle.I first experienced gluten free Truffle Pizza at one of my favorite restaurants, Arba, on the Upper West Side of Manhattan. The restaurant is owned by the awesome Orly Gottesman (of Orly’s Flour Blends fame) and they make the best gluten free truffle pizza and spinach artichoke pizzas I’ve ever had.I love them so much that I have Dear Daughter bring them all the way from NYC to Chicago when she comes home.
And then…
I started doing my gluten test, where I got to eat all kinds of glutenous foods that in the past I only wished I could eat. One of those foods was the Hometown Chicago’s very own Nuovo Truffle Pizza.
I have to admit before I ate it I really thought it was a lot of hype over a pizza.
Then I ate it.
Truffle Pizza becomes a must have!
While I loved the Truffle Pizza at Arba, I was reminded exactly how much I love glutenous Truffle Pizza when I had my existential pizza experience at Nuovo. I realized then, that while my relationship with gluten was going to have to be curtailed, my love of all things truffle was not.And so started my gluten free (plant based optional) Truffle Pizza Quest.
The Quest for the perfect Gluten Free Truffle Pizza
I started with a mix for gluten free pizza crust because I wanted the toppings and flavors to speak for themselves. First I ordered a boatload of different mushrooms from a local produce store. What I ordered and what arrived were very different things – as is know to be the case when ordering any type of groceries online.I ended up with crimini/baby bella, shiitake, and oyster mushrooms. I was happy with that mix, and sauteed them in a little bit of truffle oil and garlic oil until they were soft and all the liquid was released.
In order to have a really crispy crust, I set the oven to 400°F and preheated a pizza stone in the oven. Then I did a first bake of the crust before adding any toppings.
No sauce for you
When I researched different Truffle Pizza recipes, the thing that was common among most was that they didn’t have a tomato based sauce on the pizzas. It makes sense. Tomatoes have a very strong flavor and if you really want to enhance the truffle flavor, using a tomato based sauce just wouldn’t do it.The other thing most of the recipes had in common was that in order to get a great truffle flavor, you brush truffle oil over the crust itself before adding cheese or any other toppings.So, that’s what I did.I brushed the crust with truffle oil, added half of the (plant based) cheese, then then sauteed wild mushrooms and finished with the rest of the (plant based) cheese.The Wild Mushroom Truffle Pizza was delicious…except I didn’t love the crust.
For Truffle Pizza use a lot of Truffle stuff
Let’s go back to the original, boxed pizza crust mix crust. I’m sure it will come as no surprise that it wasn’t very good. The mix made one small crust, that crust had a weird texture and even after being brushed with truffle oil didn’t have a lot of flavor.It was time to create the Truffle Pizza crust.
Truffle here, truffle there, truffle powder everywhere
To me it seemed incredibly obvious that the best way to get the most truffle flavor in the crust was to not just brush it with truffle oil, but to add truffle powder/truffle zest directly into the crust. Well…yum.
Wild Mushroom Truffle Pizza is a Truffle lovers dream come true
The crust recipe made a great not-super-thin crust 14-inch pizza that had the perfect amount of truffle flavor. Baking the crust before and after adding the cheese/truffle oil made the crust perfectly crispy. It was wonderful.
In theory, you could make two thinner 12-inch pies using one dough recipe if you like, but I haven’t tried it.
Dear Husband would have had words with me if I had made even one more pizza.
Here’s the recipe for Gluten Free Wild Mushroom Truffle Pizza
One important thing to keep in mind is the type of cheese you use for this pizza. I found that the Violife plant based cheese melts very well in comparison to some other brands. If you’re not concerned about this pizza being plant based, then use your favorite shredded pizza cheese, layering the mushrooms in between the cheese as directed in the recipe.

Ingredients
For the Crust
- non-stick vegetable spray
- 2 cups (gluten free) flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon truffle powder/truffle zest
- 2 tablespoons canola oil
- 1 cup warm water
- 1 tablespoon apple cider vinegar
For the Mushrooms
- 8 ounces cremini mushrooms, thinly sliced (around 2 cups)
- 6 ounces shiitake mushrooms, thinly sliced (around 2 cups)
- 6 ounces oyster mushrooms, thinly sliced (around 2 cups)
- 2 teaspoons truffle oil
- 1/4 teaspoon kosher salt
To Finish
- 1 tablespoon truffle oil
- 1/4 teaspoon dried thyme
- 8 ounces plant based shredded mozzarella or 8 ounces shredded dairy pizza cheese
Instructions
For the Crust
- Preheat oven to 400°F. Place a pizza stone in the oven to heat while the oven is preheating.
- Spray a 14-inch pizza pan or two 12-inch pizza pans with non-stick spray. Set aside.
- In a medium bowl whisk together the flour, salt, baking powder and truffle powder.
- Add in the oil, water and vinegar. Stir with a large spatula until combined and smooth.
- Pat the dough evenly onto the prepared pizza pan. I find wearing vinyl gloves or oiling/wetting your hands works well to keep the dough from sticking.
- Bake the dough for 15 minutes, then remove from the oven.
For the Mushrooms
- Heat the truffle oil in a large skillet. Add the mushrooms and salt. Saute until the mushrooms are soft and all the liquid has been absorbed.
- Set aside until the crust has had it’s first baking.
To Finish
- Brush the entire baked crust with the truffle oil.
- Top the crust with half of the cheese, then the sauteed mushrooms, then the remainder of the cheese.
- Sprinkle th thyme over the cheese.
- Bake for 20 minutes until the crust is crispy on the bottom and the edges are starting to brown.
- Cut into 8 or 16 slices and serve.
