No looking back.
I’m saying so. So that means it’s official.
I’m tired of all the 2020 stuff. I’m tired of not feeling great, being sedentary, eating (maybe) less than healthy, and being completely reclusive.
Basically, I’m tired of everything that 2020 represents.
While some things that we’re not looking back at can’t be changed quite yet (I’m still reclusive), I think most of you reading this are determined, determined! to institute change!
So…while I may gloss over the not having felt great part, it’s been a little more than that.
Whatev.
Anyway, my doctor has put me on a very low carb diet (not Keto) and has also excluded a bunch of other previously yummy foods.
No chips, I guess.
I’m also exercising more. Yay me.
On the very positive side, I’m finding uses for lots of super nutritious ingredients that I’m using more than I used to.
Creative uses.
It’s kind of fun.
One of the super healthy foods I’ve been obsessed with is cauliflower. Riced it resembles…rice. Knowing how to prepare cauliflower rice seriously improves the outcome of the dish.
I’m here to help you and hold your hand if it needs to be held.
As long as you used hand sanitizer first.
My secret is not so big of a secret. I sauté the cauliflower rice in an extremely hot skillet until it’s dry. I often add a little bit of flavored oil to the pan before sautéing, and it gives the healthy cauliflower a punch of flavor with little fat or calories. Some of my favorites are garlic oil, toasted sesame oil, garlic basil oil, homemade chili oil and white truffle oil!

I recently found a non-aerosol/non-propellant white truffle oil spray at HomeGoods. I bought three. I love this spray. It gives so much flavor to just about anything I make.
I realize that not everyone is as fortunate as I am to find such a treasure (although you can order it via my affiliate link on Amazon here), so I also made a much smaller batch with a little bit of liquid white truffle oil (which you can order via my affiliate link on Amazon here), and my cauliflower rice recipe was equally awesome.
One more thing about me, if you haven’t figured it out already, I love anything mushroom.
Here’s an important fact I bet you didn’t know: Mushrooms are trending in 2021.
So…we take the healthy cauliflower rice, add a small amount of super flavorful truffle oil (mega mushroom flavor), then add fabulous shiitake mushrooms to the mix.
I made the recipe two ways. One is a mega batch using two 24 ounce bags of frozen cauliflower rice (it cooks down a lot), the other is a small batch using just 12 ounces of frozen cauliflower rice. I love them both. Just remember to dry out the defrosted cauliflower rice in a hot skillet when making them, otherwise you’ll have delicious cauliflower mush.

Description
The truffle oil and shiitake mushrooms make this humble cauliflower rice taste decadent! You won’t even believe it’s healthy too!
Ingredients
- 1 1/2 teaspoons white truffle oil or a very generous spray of truffle oil spray
- 2 24-ounce packages frozen cauliflower rice, defrosted
- 1 clove garlic, minced
- 6 cup shiitake mushrooms sliced
- 1/4 cup soy sauce
- 2 cups sliced green onions
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat a large skillet or wok over high heat.
- Add the white truffle oil and the cauliflower rice. Sauté until the cauliflower is dry, around 5 minutes.
- Reduce heat to medium and add the garlic and shiitake mushrooms. Sauté for an additional 2 minutes until the garlic and mushrooms are soft.
- Remove the cauliflower rice from the heat and toss in the green onions and black pepper.
- Can be served hot or cold.
Notes
- You can halve this recipe if you need to.
- If you don’t have truffle oil, you can use avocado or canola oil.

White Truffle Oil Cauliflower Rice with Shiitake Mushrooms – Small Batch
Description
This smaller batch of White Truffle Oil Cauliflower Rice with Shiitake Mushrooms is perfect for a cozy family dinner. It feels and tastes fancy but is incredibly easy to make.
Ingredients
- 1/2 teaspoon white truffle oil, or a generous spray of white truffle oil spray
- 12 ounces frozen cauliflower rice, defrosted
- 1 clove garlic, minced
- 4 ounces shiitake mushrooms, sliced
- 2 large green onions, sliced
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Heat a large skillet over high heat.
- Add the white truffle oil then the cauliflower rice. Sauté for a few minutes until the rice is dry.
- Add the garlic and shiitake mushrooms and sauté until the mushrooms are soft.
- Remove the skillet from the heat. Toss in the green onions, sea salt and black pepper.
- This dish is good hot or cold.
Notes
- This recipe can be doubled.
- If you don’t have truffle oil, you can use avocado or canola oil.
