The birth of the Super Speedy Scrumptious Apple Pie Snack Cake
I ran out of time. It’s that simple.
I was trying to prepare fabulous dishes, delectable desserts and traditional treats for the recent Holidays. I had it all planned out. I made a meal plan, a task plan, a plan for making the plan. I had it all planned.
And then…
I ran out of time. It’s that simple.
I had a problem. I needed a super speedy, but scrumptious, dessert. It was time for some major MacGyvering. I had bought lots of delicious seasonal, fresh, juicy apples. They were sitting in my fridge looking all pretty.
An apple dessert. Check.
Whole Foods Field Trip to the Rescue
Periodically I take field trips to Whole Foods to check out the latest and greatest gluten free and/or plant based products. What I like about Whole foods is their selection, but not only that, the store brand products are generally reasonably priced.
During one of my expeditions I found a Whole Foods 365 Classic Yellow Cake Mix.
All I needed to make it was plant based butter, eggs and almond milk.
Super simple!
Putting it all together
I whipped up the yellow cake mix in no time flat. Then I tossed diced apples coated in lemon juice and The Spice House Apple Pie Spice (yes, I stock it in my pantry), and folded them into the prepared cake mix.
That’s it.
Into the oven for 30 minutes and one Speedy Scrumptious Apple Pie Snack Cake was done.
My family inhaled it.
The Recipe
I now stock multiple boxes of the cake mix in my pantry. It’s perfect for whipping up the Speedy Scrumptious Apple Pie Snack cake at a moment’s notice. I’ve also bought the chocolate version but have yet to try it. Stay tuned.
Now, keep in mind that while I made this cake gluten free, if you are a glutenous eater you can use a traditional yellow cake mix. Additionally, if you are a traditionalist and prefer to make your cakes completely from scratch you can use your favorite yellow cake recipe instead. However, if you do, be sure to remove the “Speedy” portion of the title.

Description
Freshly diced apples, fragrant apple pie spice and your favorite gluten free white cake mix make this a Super Speedy Scrumptious Apple Pie Snack Cake your whole family will inhale!
Ingredients
- nonstick vegetable spray
- 1 Classic Gluten Free Cake Mix, prepared according to package directions
- 3 large Fuji apples, peeled and diced (around 4 cups)
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon apple pie spice
Instructions
Preheat oven to 350°F.
Spray a 9-inch x 13-inch cake pan with nonstick vegetable spray and line with parchment paper, leaving an overhang.
Prepare the yellow cake mix according to package directions. Set aside.
In a medium bowl, toss the diced apples with the lemon juice and apple pie spice.
Fold the apples into the prepared cake mix until evenly distributed.
Spread the cake batter into the prepared pan. Bake for 30 minutes.
Allow the cake to cool completely before slicing into squares.
