Sprinkled with plant based parmesan, this is the perfect kick back & enjoy summer dish.
Grilled Elote Salad
Summer means grilling. Everything. When I saw recipes for Elote Salad popping up all over the place, I knew that it was going to be my go-to grilled salad this summer! It’s an easy recipe, and if you have a grill you’re set. I made a batch for Shabbat, and we can’t stop eating the leftovers!!

Good thing this recipe for Grilled Elote Salad makes a lot. Everyone loved it!!!
Making Grilled Elote Salad
I followed the recipe that can be found on All Recipes submitted by BmanS1965.
The only issue I had was there was an ingredient called “Cotija cheese”. I had never seen this cheese kosher, and after a thorough search I couldn’t find it kosher.
When in Tony’s, I found Cotija cheese and it looked a lot like grated parmesan. I also did a search for substitutions for Cotija cheese, and grated parmesan was one of them.

The whole dairy and meat thing
Given that my grill is totally meat gender, I couldn’t use diary cheese because of the whole kosher thing, you know… no meat and milk together. I ended up using the plant based Follow Your Heart grated parmesan and it worked great. Problem solved.

Plant Based Parmesan looks a lot like Cotija cheese and was a great tasting substitute.
Make sure to allocate enough time to soak the Elote Salad corn
It’s important to soak the whole corn for at least an hour because it’s going to go on the grill and we don’t want it to burst into flames. Even though the whole corn is being grilled over indirect heat, it still gets pretty cooked.

Even when the corn is put on the offset heat rack it still gets browned.

Ingredients
- 6 ears corn in the husk
Chili-Lime Mayonnaise
- 1/2 cup mayonnaise
- 1 lime, juiced
- 1 teaspoon hot sauce
- 1/2 teaspoon mild chili powder
- 1/4 teaspoon smoked paprika
- 1/2 cup grated (plant based) parmesan
- 1/2 cup coarsely chopped cilantro
- 3 scallions, sliced
Instructions
- Soak the corn in cold water for at least 1 hour.
- While the corn is soaking prepare the Chili-Lime Mayonnaise.
- Mix mayonnaise, lime juice, hot sauce, chili powder, and paprika together in a bowl. Cover and refrigerate chili-lime mayonnaise.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Drain corn and grill away from the heat source, 15 to 20 minutes.
- Let cool until easily handled. Shuck corn and return to the grill; cook over the heat source until lightly charred, 3 to 5 minutes. Remove and let cool.
- Cut kernels off the cob. Combine corn kernels, plant based grated parmesan cheese, cilantro, and scallions in a large bowl. Fold in chili-lime mayonnaise.
- Serve and enjoy!
