Gluten Free Apple Fritters
Everyone knows that Chanukah = donuts. Basically, to represent the miracle of Chanukah and the Jerusalem Temple oil lasting for eight days instead of one, we Jewish folk eat lots of foods fried in oil during the Holiday. Mainly donuts and latkes. Latkes and donuts. Donuts and latkes. But…what if there was another amazingly delicious fried pastry that wasn’t exactly a donut. One that had fresh apples, and fragrant apple pie spice? Like…Gluten Free Apple Fritters for example.These are SO good your whole family will love them!!!
How I came up with Gluten Free Apple Fritters
It almost seems a little funny to confess that I wanted a new type of donut that really wasn’t a donut. So I went to the Dunkin Donuts website to see what they had besides traditional donuts. I figured that if anyone would have something donut related that wasn’t really a donut Dunkin would have it.I found them.The Glorious Apple Fritter.

The obvious problem with the DD Apple Fritter is that they’re glutenous with a capital G. Oh, and a Dunkin Donuts Apple Fritter is a whopping 470 calories. Just saying.
It was time to get to work.

Mine had to be gluten free and as good as Dunkin Donuts. No…they had to be better than DD’s!!!
Making Gluten Free Apple Fritters
Basically I developed this recipe the way I develop a lot of my recipes. I did some searching online for different apple fritter recipes, glutenous and gluten free, and chose the best elements of all as well as scientifically determining the best ratios of ingredients.Here are some of the key elements.
Baking powder vs Yeast
Some of the recipes use baking powder to aerate the fritter dough and some use yeast. I split the difference. From experience, both work very well together and create a lighter dough when combined.Additionally, while nearly every recipe proofs the yeast in either water or (plant based) milk, I like to proof my yeast in apple juice for apple dishes. The yeast loves the sugar in apple juice and it adds more appley flavor to an already apple filled dish.Bonus!

You know your yeast is proofing properly when it starts to bubble.
The Gluten Free flour mixture
I happen to be a big fan of the Bob’s Red Mill gluten free 1:1 blue bag flour. It has a nice ratio of protein full flours and starch based flours as well as xanthan gum. It’s a pretty complete gluten free flour blend.For that reason, I didn’t use any additional flours and stuck to the one that I find works the best.
The Apples in the Gluten Free Apple Fritters
The apples are pretty pivital in the apple fritters. I used Gala. They’re a pretty great apple for pastries. They don’t turn to mush and they’re not overly sweet to make the pastries too sugary.I also used two tools that I swear by for any recipes that use diced apples. The corer/peeler I always use is by Progressive but isn’t always available. I’ll put a link to it below. I love that it does an amazingly simple job of coring and peeling the apples. Seems easy once you have the tool.
The other tool I love is my Hindy Chopper. It’s also known as the Vidalia Onion Chopper, and there are a lot of different versions of the same tool on the market. What it does for you is chop all your apples evenly – every apple piece is exactly the same size. It’s a wonder.
The Apple Pie Spice
Once again, I’m trying to add flavors that enhance the appleness of the fritters. I have an incredible apple pie spice that I got from The Spice House. It’s fragrant and smells like holidays. It gives these fritters that perfect aromatic taste. The house smelled fantastic while I was frying these fritters up.

The Spice House Apple Pie Spice is a perfect blend of freshly ground cinnamon, nutmeg, star anise, allspice, ginger and cloves.
The Frying Oil for Gluten Free Apple Fritters
Using a high smoke point neutral flavored oil is essential when frying any type of donut or pastry. I like to use peanut or avocado oil and keep the oil at roughly between 350°F and 375°F. Any higher and the fritters will get dark on the outside before the inside has a chance to properly cook through.Using a candy thermometer is super important to keep track of the oil temperature.

Using a candy thermometer when frying the Gluten Free Apple Fritters makes sure they come out perfectly golden on the outside and cooked through on the inside.

I know there will be people who will ask if these can be air fried or baked.No.Just no.You can use another type of apple if you like. If you like a more tart apple you can use Granny Smith. Just keep in mind that they are more tart. Seems obvious, but…

Ingredients
For the Apples
- 1 pound Gala apples, peeled, cored and diced
- 1 teaspoon fresh lemon juice
- 2 tablespoons granulated sugar
- 1 teaspoon apple pie spice
For the Apple Fritter Dough
- 1 teaspoon active dry yeast
- 1/4 cup warm apple juice
- 1 tablespoon fresh lemon juice plus enough warm unsweetened plain almond milk to make 3/4 cup total
- 2 large eggs, lightly beaten
- 1 teaspoon pure vanilla extract
- 2 cups gluten free 1:1 flour with xanthan gum (I like Bob’s Red Mill Blue Bag)
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/4 cup granulated sugar
- oil for frying
For the Apple Pie Spice Glaze
- 3 cups powdered sugar
- 1 teaspoon apple pie spice
- 6 tablespoons unsweetened plain almond milk, warm
- 1 teaspoon pure vanilla extract
Instructions
For the Apples
- In a medium bowl toss together the diced apples, lemon juice, sugar and apple pie spice.
- Set aside.
For the Apple Fritter Dough
- In a small bowl whisk together the warm apple juice and yeast until the yeast is completely dissolved. Set aside to proof.
- In one cup measuring cup, add the lemon juice then add enough almond milk to equal 3/4 cup total. Stir to combine then set aside.
- In a small bowl or measuring cup whisk together the egg and the vanilla. Set aside.
- In a large mixing bowl, whisk together the flour, baking powder, salt and sugar.
- Stir in the proofed yeast, the lemon juice/almond milk and the eggs/vanilla. Mix until a sticky dough is formed.
- Fold in the spiced apples until evenly distributed in the dough.
- Place a wire rack over a baking sheet and cover with paper towels. Set aside.
- Bring a medium pot of oil, around 3-inches in depth, to 350°F – 375°F. Measure the temperature using a candy thermometer.
- Using a large spoon or scooper, scoop out portions of the dough. Flatten slightly then carefully place in the oil. Fry until golden brown on each side, then place the fried apple fritters on the prepared paper towels.
- Repeat until all the dough is fried. Allow the apple fritters to cool.
For the Apple Pie Spice Glaze
- Cover a baking sheet with a wire rack. Set aside
- Place the powdered sugar in a large bowl. Whisk in the apple pie spice then the warm almond milk until a thin glaze is formed.
- Using a dipping fork, drop a fritter into the glaze and turn until completely coated. Remove the glazed apple fritter from the bowl and carefully set on the wire rack to allow any excess glaze to drip off. Repeat with the remaining apple fritters.
- Serve the apple fritters with any excess Apple Pie Spice Glaze.
