Description

Gluten Free Apple Fritters are the perfect not-exactly-donut pastry.  The aromatic Apple Fritters golden-brown exterior is glazed with a sweet apple pie spiced glaze, has a satisfyingly crunchy exterior and a moist & flavorful interior. Fresh diced apples, provide a burst of sweetness and a hint of tartness.  These pastries are an awesome fried Chanukah treat that are great for the GFE (Gluten Free Eater) and anyone who loves a good pastry!


Ingredients

For the Apples

  • 1 pound Gala apples, peeled, cored and diced
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon apple pie spice

For the Apple Fritter Dough

  • 1 teaspoon active dry yeast
  • 1/4 cup warm apple juice
  • 1 tablespoon fresh lemon juice plus enough warm unsweetened plain almond milk to make 3/4 cup total
  • 2 large eggs, lightly beaten
  • 1 teaspoon pure vanilla extract
  • 2 cups gluten free 1:1 flour with xanthan gum (I like Bob’s Red Mill Blue Bag)
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/4 cup granulated sugar
  • oil for frying

For the Apple Pie Spice Glaze

  • 3 cups powdered sugar
  • 1 teaspoon apple pie spice
  • 6 tablespoons unsweetened plain almond milk, warm
  • 1 teaspoon pure vanilla extract


Instructions

For the Apples

  1. In a medium bowl toss together the diced apples, lemon juice, sugar and apple pie spice.
  2. Set aside.

For the Apple Fritter Dough

  1. In a small bowl whisk together the warm apple juice and yeast until the yeast is completely dissolved.  Set aside to proof.
  2. In one cup measuring cup, add the lemon juice then add enough almond milk to equal 3/4 cup total.  Stir to combine then set aside.
  3. In a small bowl or measuring cup whisk together the egg and the vanilla.  Set aside.
  4. In a large mixing bowl, whisk together the flour, baking powder, salt and sugar.
  5. Stir in the proofed yeast, the lemon juice/almond milk and the eggs/vanilla.  Mix until a sticky dough is formed.
  6. Fold in the spiced apples until evenly distributed in the dough.
  7. Place a wire rack over a baking sheet and cover with paper towels.  Set aside.
  8. Bring a medium pot of oil, around 3-inches in depth, to 350°F – 375°F.  Measure the temperature using a candy thermometer.
  9. Using a large spoon or scooper, scoop out portions of the dough.  Flatten slightly then carefully place in the oil.  Fry until golden brown on each side, then place the fried apple fritters on the prepared paper towels.
  10. Repeat until all the dough is fried.  Allow the apple fritters to cool.

For the Apple Pie Spice Glaze

  1. Cover a baking sheet with a wire rack.  Set aside
  2. Place the powdered sugar in a large bowl.  Whisk in the apple pie spice then the warm almond milk until a thin glaze is formed.
  3. Using a dipping fork, drop a fritter into the glaze and turn until completely coated.  Remove the glazed apple fritter from the bowl and carefully set on the wire rack to allow any excess glaze to drip off.  Repeat with the remaining apple fritters.
  4. Serve the apple fritters with any excess Apple Pie Spice Glaze.
