OK… that’s a bit much (maybe), but seriously. These waffles are just delicious. Especially topped with rich, creamy, tangy, fruity, small-batch Ellenos Blueberry Pomegranate Greek yogurt.
How I came up with Blueberry Pomegranate Waffles
I was recently hired to do some social media for the Ellenos Greek Yogurt company. No, they didn’t hire me to do this post, however, I’m sharing the recipe I came up with because it’s just that good.

Blueberry Pomegranate Waffles with Ellenos Greek Yogurt. The yogurt really adds a ton of flavor to these waffles.
I wanted to come up with a recipe for Mother’s day that incorporated the flavors of the yogurt. I’ve done waffle recipes in the past, so this was going to be a fabulous variation of a previous recipe – maximizing the pomegranate and blueberry flavors.
Oh, and all the ingredients had to be stuff I could find in Whole Foods.

The recipe is based upon the Lemon Blueberry & Matcha Blueberry Waffle post recipes, which I published for Mother’s day a few years ago.

Light fresh, crispy on the outside, fluffy on the inside, Lemon Blueberry & Matcha Blueberry Waffles!!!!! I make the waffle mixture from scratch but you can use your favorite (gluten-free) pancake mix as well, for similar results. Mom will love you and your family will love you after Mother’s day when you make these for breakfast!
I love these recipes, and because they’re so good, all I did was make a few substitutions and viola.
Changes in the recipe
- Instead of fresh blueberries I substituted dried blueberries. I find that they work a little better in waffle irons, making less of a mess, and plump while cooking. Feel free to use fresh blueberries, just be sure to toss them in some of the dry waffle mix before adding them to the batter.
- I wanted this recipe to have a super pomegratatey punch, so half of the “milk” is replaced with blueberry pomegranate juice, and there are three tablespoons of pure pomegranate powder in the batter.
- The Ellenos Blueberry Pomegranate Greek yogurt is insanely rich and creamy, kind of like a dessert. When you top these waffles with the yogurt and then fresh blueberries and pomegranate arils, it’s insanely good.
- The Blueberry Pomegranate Waffles are also topped with a simple blueberry syrup, made up of only frozen blueberries and sugar. It gives the waffles a huge blueberry punch of flavor.

While I happened to have a bag at home, I found this bag of Navitas Pomegranate Powder in the health section of Whole Foods rather than the baking section.
Here’s the recipe for Blueberry Pomegranate Waffles with Ellenos Greek yogurt
As I mentioned in the recipe for Lemon or Matcha Blueberry waffles, You can use pancake/waffle mix if you have it handy or whip up your own mix pretty quickly. For this recipe I used a mix, but I’m including the recipe for a quick “mix” as well in the recipe notes.
I’ll also add links for the pomegranate powder, dried blueberries and blueberry pomegranate juice. I’m kind of in love with my Mini Dash waffle maker, but you can use any brand/type – just spray it with propellant free spray before you do.

Ingredients
For the Blueberry Syrup
- 12 ounces frozen blueberries (or fresh)
- 1/2 cup granulated sugar
For the Waffles
- 1 1/2 cups pancake mix (gluten free)
- 3 tablespoons dried pomegranate powder
- 1/2 cup unsweetened almond milk, or other milk
- 1/2 cup blueberry pomegranate or pomegranate juice
- 1/4 cup canola oil
- 1 large egg, or 3 tablespoons JUST Egg
- 1/2 cup dried blueberries
To Finish
- 1 (5.3-ounce) container (Ellenos) Blueberry Pomegranate Greek Yogurt
- Fresh blueberries and pomegranate arils for garnish (optional)
Instructions
For the Blueberry Syrup
- Combine the frozen blueberries and sugar in a medium saucepan. Heat over medium heat until the blueberries are defrosted.
- Reduce heat to low and simmer while preparing the waffles. You can make this in advance and store it in an airtight container.
- If the syrup thickens too much, add a little water to loosen it, stirring until you get a syrupy consistency.
For the Waffles Batter
- Preheat waffle iron for 10 minutes until hot.
- You can prepare the waffle batter while the waffle iron is heating.
- Combine the waffle mix with the pomegranate powder, milk, pomegranate juice and the egg. Whisk until just combined.
- Fold in the blueberries.
- Spoon the waffle batter into the waffle iron, until just spread into the waffle space. DO NOT OVERFILL.
- Allow the waffles to cook until browned and easy to remove from the waffle iron.
- Repeat with the remaining batter.
To Finish
- Top the waffles with the Blueberry syrup, Blueberry Pomegranate Greek yogurt and additional fresh blueberries and pomegranate arils.

The waffles can be made in advance and frozen in an airtight container. You can reheat them by popping them in a toaster and toasting until warm and slightly crispy.
If Making the Dry Waffle Mix from Scratch
- 1 1/2 cup (gluten-free) flour with xanthan gum
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 tablespoon granulated sugar
If using fresh blueberries instead of dried
- Combine 1/2– 1 cup fresh small blueberries, rinsed but not dried + 1 tablespoon pancake mix or gluten free flour
