Sesame Green Beans with Ramen Noodles
There’s a secret to making the best ever green beans and incredible sesame noodles… put them together with some unique, savory, tangy and umami-packed ingredients! Sesame Green Beans with Ramen Noodles are made with fresh green beans, rich toasted sesame oil, brown rice ramen and a little brown sugar to balance the flavors. I also added some new ingredients that I found and ordered on the Eden Foods website (no affiliation), and was blown away by what a difference they made.
Using some unique ingredients in Sesame Green Beans with Ramen Noodles
It’s a given that the freshest ingredients are the best. That’s why I would only use fresh, blanched green beans in this recipe. I also strongly recommend only using toasted sesame oil because a little packs a boatload of flavor.
But what really made this recipe pop are ingredients that I’d never used before and they made all the difference.
Brown Rice Vinegar
I frequently get some amazing recipe ideas from some of the email lists I belong to. There was an article that came in my Simply Recipes email about making the best green beans. The author, Kat Lieu, recommended adding some black vinegar to the beans after cooking them – it’s the “Chinese way”.
“But my real secret to better green beans is simply to bathe them in soy sauce and black vinegar… Black vinegar brings tanginess, smokiness, and a hint of caramelized flavor.”
So… I started my search for Kosher black vinegar with a reliable certification.
The closest I came was Eden brand Brown Rice Vinegar. It has the same properties as black vinegar and was a very good substitution for black vinegar.
Adding it to the Sesame Green Beans with Ramen Noodles gave it a tangy, sweetish flavor that wasn’t overwhelmingly vinegary. It was a great balance to the added soy sauce and touch of brown sugar in the recipe.
Black Sesame Butter
I was really intrigued by the Eden Foods Black Sesame Butter (non-affiliate link). I wasn’t quite sure what it was, but knew it would have a lot of sesame flavor, and was interested in trying it out.
According to the Eden Foods website
“(Black Sesame Butter is…) A creamy rich black sesame paste with a superior amino acid profile and healthy fats. Black sesame seed, whole, organic, dry roasted, and ground to a deliciously smooth ‘nut butter’.”
After examining the jar more closely after receiving the order, I totally cracked up.
Black Sesame Butter is basically Black Tahini.

I actually included a recipe for Black Tahini in my cookbook “Shabbos Under Pressure – Cooking with Pressure = Pressure Free Cooking” on page 145! The Black Tahini is used in recipe for Blackest Black Bean Hummus on page 120. SO funny!
Substitutions for the Cool ingredients used in Sesame Green Beans with Ramen Noodles
I’m fully aware that not everyone has all the specific cool ingredients that are found in Sesame Green Beans with Ramen Noodles. Here are some of the substitutions that would work.
- Black Sesame Butter: Use pure white tahini in equivalent quantity.
- Brown Rice Vinegar: Use rice vinegar or seasoned rice vinegar.
- Toasted Sesame oil: Pure sesame oil.
- Brown Rice Ramen Noodles: Any ramen noodles or (gluten free) pasta.
- Toasted Sesame Seeds: White or black sesame seeds.
- Garlic oil: 1/2 teaspoon minced garlic with 1/2 teaspoon extra virgin olive oil
- Shiitake mushrooms: Cremini mushrooms

I made this recipe for my human “guinea-pigs” this past Shabbat and they went crazy over it. It was kind of shocking! I mean the put on the boxing gloves and were fighting each other for the last scraps in the bowl.
In reality, they really loved the Sesame Green Beans with Ramen Noodles, and insisted that they wouldn’t change a thing in the recipe.
Now that’s high praise indeed!

Description
Sesame Green Beans with Ramen Noodles are fresh, unique, savory and tangy with SO MUCH umami-packed sesame flavor. The tender, crisp green beans and soft brown rice ramen noodles are coated in a sesame, soy sauce and brown sugar dressing that creates a new and intriguing twist on everyday green beans and traditional sesame noodles! You can serve it hot or cold, for dinner or as a Shabbat side. It’s perfect for your Thanksgiving green bean side dish too!
Ingredients
- 1 tablespoon toasted sesame oil
- 1/4 teaspoon garlic oil, or 1/4 teaspoon freshly minced garlic + 1/4 teaspoon extra virgin olive oil
- 4 ounces shiitake mushrooms, sliced
- 1 tablespoon black sesame butter (tahini)
- 1 pound fresh green beans, trimmed and blanched
- 2 brown rice ramen cubes, cooked, drained and rinsed with cold water – DO NOT OVERCOOK
- 3 tablespoons brown rice vinegar
- 2 tablespoons soy sauce
- 1/4 cup toasted sesame oil
- 2 tablespoons brown sugar
- 1 cup green onion, thinly sliced
- 2 tablespoons toasted sesame seeds, plus more for garnish
Instructions
- Heat the tablespoon of toasted sesame oil and garlic oil in a large wok or skillet over medium/high heat. Add the shiitake mushrooms and cook until soft.
- Reduce the heat to medium and add the black sesame butter and stir until the mushrooms are evenly coated.
- Stir in the green beans and toss until completely coated, then add the ramen noodles and gently stir to combine.
- Off the heat then add the brown rice vinegar, soy sauce, quarter cup of toasted sesame oil and brown sugar. Toss until all the ingredients are evenly blended.
- Sprinkle with the green onion and toasted sesame seeds and mix.
- Serve hot or cold, garnished with additional toasted sesame seeds. May be made a day ahead and stored tightly covered in the refrigerator and served cold.
