Jury Duty Cilantro Salad with Avocado Dressing
A few weeks ago I had Jury Duty for a criminal case. It was a fascinating experience, and I got to sit in a classic, old fashioned court room, just two seats away from the witness box and directly across from the defendent. I was selected as juror number twelve…the last juror selected, and was super surprised that I was actually chosen. Of course, I didn’t forget my civic or writer’s duty and managed to get a fantastic sald recipe from my felow juror! Jury Duty Cilantro Salad with Avocado Dressing was given to me by Mike, the Jury Foreman.

About Jury Duty Cilantro Salad with Avocado Dressing
Aside from our whopping $35 per day salary, the court also provided lunch for the Jurors. It was usually wraps or sub sandwiches, absolutely not kosher, so I had to bring my own lunch every day. It wasn’t a hardship.Sitting next to me was Fellow Juror Mike. Every day Mike brought the most fabulous, healthy looking salad. It consisted of some sort of cabbage and meat, with a green dressing he brought in a teeny mason jar. I was definitely lunch snooping.It looked incredible. Sadly, I don’t have a picture of it but trust me when I tell you it really looked healthy and delicious.
I asked Mike for the recipe and he was happy to give it to me.
The only issue with the salad was that I had to substitute the ham for smoked turkey. It’s a great substitution and adds tons of flavor to the salad.
Jury Duty Cilantro Salad with Avocado Dressing is incredibly fresh!
This salad is packed with super fresh ingredients. I made it even easier than Mike’s salad by using store bought cole slaw mix rather than cutting up fresh cabbage. The store bought cole slaw mix also makes the salad a little more colorful, and the size of the cabbage cuts is perfect without having to worry about if you’re cutting the cabbage into the correct size pieces.You also add a bag of ready sliced, julienned carrots.Super simple.The biggest effort you have to make is dicing the smoked turkey and chopping the fresh cilantro.
Haters gonna hate
If you’re a cilantro hater, this salad is not for you. I totally get it. Cilantro tastes like soap to you. It’s like eating a bar of Coast. It’s a genetic thing. Hard pass.Not offended. At all.
Using fresh ingredients
While some of the ingredients may be prepped for you, they’re still super fresh. The Avocado Dressing requires three ripe avocados and the juice from four freshly squeezed limes.
I also strongly recommend using a food processor to mix all the ingredients. Smashing them, while it might get out all your inner frustrations, won’t make the dressing smooth enough.
Unless you’re really stressed.
Substitutions for the Jury Duty Cilantro Salad with Avocado Dressing
If you don’t want to use a meat in the Jury Duty Cilantro Salad with Avocado Dressing, you can use a seasoned/marinated/baked tofu, like the House Foods Savory Orange Tofu Cutlet or the 365 Whole Foods Market Lemon Pepper Tofu Bites.

I wrote down the original recipe on my phone in the jury room. This is what it looks like:
I updated the recipe by using ready made cole slaw and lots of smoked turkey breast. I also substituted some crushed red pepper instead of the Thai chilis. You can feel free to use those instead of the crushed red pepper as you’re the Executive Chef in your kitchen!

Filled with fresh cilantro, carrots, cabbage and a flavor packed avocado lime dressing, this salad will quickly become a staple. The leftovers are awesome for a quick, ready made lunch. If you like cilantro, this salad is for you and all of the rest of the cilantro lovers in your life.
Ingredients
For the Salad
- 16 ounces smoked turkey breast, diced
- 1 (16-ounce) bag cole slaw mix, no dressing
- 1 (10-ounce) bag shredded carrots
- 2 bunches cilantro, leaves only, stems removed and reserved
- Additional cilantro for garnish
For the Avocado Dressing
- 3 ripe avocados, peeled and seeded
- Juice of 4 limes
- 1/4 teaspoon crushed red pepper flakes, or to taste
- reserved cilantro stems
- 1 cup water
Instructions
For the Salad
- In a large bowl toss together the smoked turkey, cole slaw, carrots and cilantro.
- Cover and refrigerate while preparing the dressing.
For the Avocado Dressing
- Using a food processor, blend together the avocado, lime juice, cilantro stalks and crushed red pepper until smooth.
- While the processor is running, slowly add the water to form the Avocado Dressing.
- Transfer to a storage container with a tight lid and refrigerated until ready to serve.

You can substitute a baked/seasoned/marinated tofu for the smoked turkey breast.
If you’re not a fan of added protein you can leave out the smoked turkey altogether, however the smoked turkey adds a lot of flavor to the salad.
