Ingredients

Units Scale

For the Salad

  • 16 ounces smoked turkey breast, diced
  • 1 (16-ounce) bag cole slaw mix, no dressing
  • 1 (10-ounce) bag shredded carrots
  • 2 bunches cilantro, leaves only, stems removed and reserved
  • Additional cilantro for garnish

For the Avocado Dressing

  • 3 ripe avocados, peeled and seeded
  • Juice of 4 limes
  • 1/4 teaspoon crushed red pepper flakes, or to taste
  • reserved cilantro stems
  • 1 cup water

Instructions

For the Salad

  1. In a large bowl toss together the smoked turkey, cole slaw, carrots and cilantro.
  2. Cover and refrigerate while preparing the dressing.

For the Avocado Dressing

  1. Using a food processor, blend together the avocado, lime juice, cilantro stalks and crushed red pepper until smooth.
  2. While the processor is running, slowly add the water to form the Avocado Dressing.
  3. Transfer to a storage container with a tight lid and refrigerated until ready to serve.

Notes

You can substitute a baked/seasoned/marinated tofu for the smoked turkey breast.

If you’re not a fan of added protein you can leave out the smoked turkey altogether, however the smoked turkey adds a lot of flavor to the salad.
