Fried Lasagna Mozzarella Sticks are the crispy, golden-brown perfection of a classic mozzarella stick, but instead of just breading, they’re wrapped in a cozy little blanket of actual, honest-to-goodness lasagna noodle! Crazy, right??? These are great switch from the ubiquitous latke as a fried treat for Chanukah. You can even make these in advance, and fry them as needed. Cheesy, gooey, crispy crunchy goodness in a single stick!
Fried Lasagna Mozzarella Sticks
Fried Lasagna Mozzarella Sticks are perfectly fried, crispy, flavorful with that gooey cheese pull we all love. Perfect for Chanukah and best of all… they’re not latkes! 😆
A little while ago I saw an Instagram reel with two guys eating Fried Lasagna Mozzarella Sticks. I was really curious about it and saw that there were a lot of recipes online for them. The issue that I have is making them, is that they have to be gluten free and kosher.

What are Fried Lasagna Mozzarella Sticks?
Fried Lasagna Mozzarella Sticks are cooked lasagna noodles, wrapped around mozzarella cheese, dipped in egg and seasoned bread crumbs then fried until they’re gooey, crispy, golden brown cheesy goodness.

Making Fried Lasagna Mozzarella Sticks
I made these gluten free using rice based lasagna noodles and kosher using kosher cheese sticks. I had to work the recipe a little differently than the ones posted as the ingredients aren’t the same.
Adding whipped chive cream cheese to the Fried Lasagna Mozzarella Sticks recipe
In the first (and photographed) iteration of this recipe, I made these without spreading a layer of whipped chive cream cheese on the lasagna noodles, which would have made for a creamier inside and cheese pull. Dear Daughter-in-Law and her mother taught me that trick when I last visited them in Israel and she prepped an incredible Aripa, with a layer of cream cheese, then mozzarella, then avocado. The cheeses melted together and were incredible.

Using Gluten Free Lasagna Noodles for the Fried Lasagna Mozzarella Sticks
This doesn’t seem so complicated, however, how the recipe turns out depends on which gluten free lasagna noodle you find.
What the noodles are made of

Tinkyada Gluten Free Brown Rice Pasta Lasagne. I bought the organic version of this one, but all brown rice pasta needs to be treated the same way.
Some lasagna noodles are brown rice based, some are corn based. It does make a difference. I will generally rinse and brown rice pasta after it’s cooked because they have a tendency to come out gummy/sticky if they’re not rinsed.

That being said, you need to look at the pasta after it’s cooked. If the water is really cloudy then rinse the pasta, if not just drain.

The number of noodles in the package
Additionally, some gluten free lasagna packages contain more noodles than others. For example, the Jovial gluten free lasagna only contains 8 noodles (at least that’s what the serving size indicates). You may need to purchase two packages if you want to make more than just eight.
The size/width of the lasagna noodles
Some gluten free lasagna noodles are wider than others, so when cutting the cheese sticks consider the width of the noodles you’re using. I used the Tinkyada Organic Brown Rice Noodles and had to cut each cheese stick into three to accommodate the width of those noodles.

I didn’t think the egg and the crumbs would stick if the noodles were wet, so I simply dried them on a towel before rolling.

Here are the additional things to note:
I used seasoned gluten free bread crumbs to coat the lasagna noodles. I’m a fan of the Jason brand however, I recently purchased another brand and I’ll let you know how it turns out.
Working with Caraway Pans
A while back Caraway was nice enough to send me their Mini Bakeware Set. I’m a HUGE Caraway fan, am an affiliate, and frequently recommend their incredible baking sheets. What’s great about this set is it comes with two quarter sheet pans, a cooling/drip rack that fits into said pans, a small 9″x6.5″ rectangle pan and a 6 cup muffin pan. If you have a toaster oven that’s big enough for a 9″x13″ inch pan then these are perfect. They’re also the best for when you want to make smaller portions and don’t want to use larger baking sheets.

Caraway Mini Bakeware Set, has that awesome Caraway ceramic nonstick coating that really is nonstick! Perfect. Simply Perfect.
Finally, they come in a perfect carrying case that looks good on your counter but is compact enough to fit in a cabinet.
Anyway, these guys really came in handy for making this recipe. Check out how I used nearly every pan in the set. When I was done, I tossed them in the dishwasher and then back in their case where they sit prettily on my counter.

Using Caraway Mini Bakeware to make Fried Lasagna Mozzarella Sticks. I used the 9×13 inch pans to hold the rolls and the mini rectangle pan to hold the crumbs. Perfect.
Then I used the rack as a drip pan when frying the Lasagna Mozzarella Sticks.

Check out how one pan held the rolled & breaded Lasagna Mozzarella Sticks and the other was for after they were fried. Perfect!

Just for funsies:
I used my favorite GreenPan Performance Pro Ceramic Blue Nonstick Skillet (blue = dairy in my house) to fry these babies up. It did a great job!

These Fried Lasagna Mozzarella Sticks were fairly easy to make, but they did take a little bit of time. One thing that’s essential is freezing the breaded mozzarella sticks before frying. This allows the cheese and the breading to set so it doesn’t ooze out while frying. Don’t skip this step.
You can also make them in advance. Keep them tightly covered in an airtight container in the freezer until ready to fry. You can make a double recipe in advance and fry them to your hearts content on each night of Chanukah, or the day of the big game!

Ingredients
- 1 10-16 ounce package (gluten free) lasagna noodles
- 8-10 mozzarella sticks (number dependent upon the number and size of the noodles in the package)
- 1 teaspoon kosher salt
- 8 ounces whipped chive cream cheese (optional)
- 4 large eggs, lightly beaten
- 1 1/2 cups seasoned (gluten free) bread crumbs
- 1 baby carrot or small carrot piece
- avocado or peanut oil for frying
- marinara sauce for dipping
Instructions
- Add the salt to a large stock pot (6-8 quart) 2/3 full of water. Bring it to a boil over high heat. Add the lasagna noodles and bring to a boil, then reduce the heat to medium. Using a pasta fork or large spoon, gently separate the noodles while cooking. Cook according to package directions until al dente. Be careful not to overcook.
- Drain the noodles. If using rice noodles, rinse to remove the cloudy water.
- Place a large kitchen towel on the counter. Gently and carefully spread the drained noodles on the towel. Allow to dry for around 5-10 minutes.
- Cut the cheese sticks to the width of the noodles, generally three pieces per stick. Set aside.
- Place the crumbs in a large bowl or small baking pan. Set aside.
- Place a noodle on a cutting board. If using traditional lasagna noodles (gf), fold the noodle in half and cut with a sharp knife or kitchen sheers.

- Working with one noodle half at a time, brush a little egg on the end. If using the cream cheese, spread a thin layer over the noodle with a spoon or offset spatula.
- Place a piece of cheese stick on the end of the noodle halve and tightly roll it up. Press the end to seal, and place on a baking sheet, seam side down while repeating with the remaining lasagna noodles.
- For each roll: Dip the roll in egg, shaking off any excess, then transfer to the crumbs. Press the crumbs onto the roll covering the ends as well. Place on a small baking sheet. Repeat with the remaining rolls.
- Cover the noodle baking sheet with plastic wrap, then freeze for at least one hour. These can be made in advance and stored in the freezer until ready for the next step.
- Fill a large, deep skillet with around 1 to 1 1/2 inches of oil. Heat the oil and add the baby carrot. When the carrot starts to sizzle or the oil is hot, fry the rolls on both sides until golden brown.
- Transfer to a rack over a pan to drain. Repeat with the remaining rolls.
- Serve immediately with your favorite marinara sauce.
