Apple Matzo Brie Waffles
Every year Jews around the world try to come up with uses for the matzo/matzah that is left over from the Passover Seder. There’s also a need to feed our ravenous families (they always seem to be hungrier on Passover…right???) with a limited supply of Kosher for Passover foods. Matzo Brie is a staple for Kosher for Passover families everywhere. It’s simple…matzo, eggs, stuff, fry, done. But… it gets old. I mean, Matzo Brie again???!!!So I partnered with Dash and came up with the concept of Apple Matzo Brie Waffles!

Making Apple Matzo Brie Waffles
Matzo Brie is traditionally fried in oil for a crispy matzo dish. I thought…”What if instead of actually frying the Matzo Brie, we changed the recipe up slightly and cooked it in a waffle maker????!!!!”While at the International Housewares Show, I spoke with my buddies at Dash and they sent me a bunch of waffle makers to try it out. So I did.

The best waffle makers for making Apple Matzo Brie
Dash sent me an Express Waffle Maker and an Express Waffle Bite Maker. I already had a Mini Waffle Maker. I wanted to see which one made the absolute best Apple Matzo Brie Waffles.
The Express Waffle Bite Maker
I found that the Express Waffle Bite Maker was a little more challenging. Because of the matzo shape, the mini wasn’t as conducive to the smaller waffle bites. I did get some that were perfect, but it would take a little more effort to get the mini Apple Matzo Brie Waffles to turn out beautifully. If you aren’t a perfectionist then the mini’s are super cute and worth the effort.

The Express Waffle Maker
I liked the way the Apple Matzo Brie Waffles turned out in the Express Waffle Maker. The key is to evenly distribute the Apple Matzo Brie Batter in the waffle iron, otherwise it browns unevenly. I flipped them over when they were done because for whatever reason the underside was prettier than the top. Go figure.This waffle maker is best for faster results. You can basically make four waffles in the time it takes to make a single, you just have to cut the waffles into four after they’re done cooking.

You can see the difference in size between the Express Waffle Maker and the Mini Waffle Maker. Make sure the Mazo Brie Batter is even in the waffle iron.
The Mini Waffle Maker
The Mini Waffle Maker is the one you see in all the stores and runs around $10. This little gem is really one of my favorites. It’s reasonably priced, small and compact, and is super versatile. You can toss just about anything into this guy and make it into a waffle!I actually liked this one the best of all the waffle makers for Apple Matzo Brie Waffles. Once I got the hang of how much Matzo Brie batter to put into the waffle maker, the waffles definitely were the prettiest coming out of this one.

I liked how the Dash Mini Waffle Maker Apple Matzo Brie Waffles turned out. The Express Waffles turned out pretty as well.

The recipe for the Apple Matzo Brie Waffles is basically an adjusted classic Matzo Brie recipe – with a few exceptions.
Making the Apple Matzo Brie Gluten Free
Unlike Classic Matzo Brie that uses glutenous matzo in the recipe, my Apple Matzo Brie is gluten free. I used my favorite Yehuda gluten free matzo for this recipe. The thing about gluten free matzo is that if you add liquid to them they turn into mush.It’s a fact.So rather than soak or thoroughly moisten the matzo like you might for traditional, glutenous matzo brie, I just added eggs, oil and vanilla as the liquid, and didn’t over mix the batter. I tossed the matzo mixture just enough to coat.

Making sure the apples are the right size
The first time I made the Apple Matzo Brie Waffles, I had an issue with the batter holding it’s shape after being waffled. The problem was that I had cut the apple chunks too large and the waffles didn’t hold together as a result.

I reduced the size of the apples and increased the egg and oil and the result was way better.

Here’s the recipe for Apple Matzo Brie Waffles
While I made my Apple Matzo Brie Waffles gluten free you can certainly make them glutenous. For more apple flavor, I recommend dipping the traditional glutenous matzos in apple juice before prepping the recipe. This way the matzos will be soft enough to make the matzo brie waffles.Additionally, these waffles can be made savory. Simply omit the apples and substitute green onions and your favorite flavored oil. You can add sauteed mushrooms as well – just make sure the liquid has been completely absorbed.Savory Matzo Brie Waffles would be awesome as Chicken and Waffles!

Ingredients
For the Apple Matzo Brie Waffle apples
- 3 medium apples, peeled and finely diced
- juice of 1/2 lemon
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
For the Apple Matzo Brie Batter
- 1 10.5–ounce box gluten free matzo
- 6 large eggs
- 1/2 cup oil (avocado or another neutral oil)
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 2 tablespoon granulated sugar
For the Caramelized Apple Topping
- 2 large apples, cored and diced (leave the peel on)
- 2 tablespoons granulated sugar
To Finish
- Nonstick propellant free oil/spray
- apple slices and other fruit for garnish (optional)
- whipped cream (optional)
- pure maple syrup (optional)
- apple jelly (optional)
Instructions
For the Apple Matzo Brie Waffle apples
- Place the apples in a medium bowl. Pour the lemon juice over the apples and sprinkle with the sugar and cinnamon.
- Toss to coat. Set aside.
For the Apple Matzo Brie Batter
- Preheat a waffle iron of your choice.
- Remove the matzo from the box, leaving the matzo in the inner bag. Crunch the matzoh with your hands until there are only small pieces. Set aside.
- Whisk the eggs, oil, vanilla and salt together in a large bowl. Add the broken matzo and lemon apples to the egg mixture. Gently toss until the matzo is completely coated.
To Make the Apple Matzo Brie Waffles
- Grease the heated waffle iron. Evenly spread Apple Matzo Brie Batter on the waffle iron. Close and press the lid down gently to evenly distribute the batter in the iron.
- Cook until the waffle is browned and holds it’s shape. Remove from the waffle iron and repeat with the remaining batter.
For the Caramelized Apple Topping
- While the waffles are cooking prepare the Caramelized Apple Topping.
- In a large skillet (preferably non-stick), sautรฉ the apples and sugar until they are slightly caramelized, stirring constantly.
- Remove from the skillet and transfer to a small serving bowl.
To Finish
- Serve the Apple Matzo Brie Waffles topped with the Caramelized Apple Topping, whipped cream, maple syrup and your favorite fruit.
- These are best served fresh and hot.
