The Optimistic Garden’s Fresh Tomato Salad
Summer is here and all the plants that I started from seedlings are starting to flower. I transplanted some of the older plants, that were already filled with tomatoes in my Aero Garden, into my outside Optimistic Garden. We’re eating vine ripe, super fresh, incredibly flavorful, luscious ripe cherry tomatoes. Fresh Tomato Salad is the perfect way to use these fresh, ripe, juicy tomatoes!

A simple Fresh Tomato Salad!
This salad is my Dear Daughter in Law’s and Sharyn’s (family by choice) favorite. I actually try to make it every week because they love it so much.
It’s just about the easiest salad I’ve ever made in my entire life.
Sometimes you need to take it easy
I’m going to make this one short and sweet.
It’s the season for ripe, delicious, home grown or farmer grown cherry or grape tomatoes. You can even get the multi-colored ones.
I use vegan parmesan for this recipe so I can serve it with my meat meals. I rarely have any left over.

Description
Nothing says summer like fresh tomatoes plucked straight off the vine! This super simple, super speedy Fresh Tomato Salad is perfect for your summer BBQ or as a light, healthy dinner salad. You can use dairy or vegan parmesan for this colorful, flavor bursting salad.
Ingredients
- 10 ounces cherry tomatoes
- 1 small shallot, thinly sliced (around
- 1/4 cup vegan parmesan (or to taste)
- 1 tablespoon canola oil
- 1/4 teaspoon kosher salt
- dash freshly ground black pepper
Instructions
Slice the tomatoes in half and place in a medium bowl.
Add the sliced shallot, parmesan, canola oil, kosher salt and black pepper. Toss to combine.
Serve chilled.
Notes
My guests like this recipe with more vegan parmesan. If you’d like less or more feel free to modify the recipe according to your tastes.
You can use multi colored tomatoes for a festive alternative.
