Preheat oven to 350°F. Spray a 9-inch x 13-inch cake pan with nonstick vegetable spray and line with parchment paper, leaving an overhang. Prepare the yellow cake mix according to package directions. Set aside. In a medium bowl, toss the diced apples with the lemon juice and apple pie spice. Fold the apples into the prepared cake mix until evenly distributed. Spread the cake batter into the prepared pan. Bake for 30 minutes. Allow the cake to cool completely before slicing into squares.
