Flower Shaped Squash Kugel

Ingredients

  • 2 10 ounce packaged cooked winter squash, defrosted, drained
  • 1/2 cup flour
  • 1/2 cup sugar or Splenda
  • 1/2 cup soy milk, preferably vanilla flavored
  • 3 large eggs
  • Non-stick vegetable spray (if using non-silicone pan)

Instructions

  1. Preheat oven to 350° F.
  2. If not using a silicone pan, spray a 9” round pan with non-stick spray.
  3. Set aside.
  4. Place the squash in a large glass bowl.
  5. Add the flour, sugar, and soy milk.
  6. Whisk until smooth.
  7. Add the eggs and blend until thoroughly combined.
  8. Pour squash mixture into pan.
  9. Bake for 45-60 minutes until completely set.
  10. Allow to cool for at least 10 minutes.
  11. If using a nifty silicone flower shaped pan, invert onto serving dish and serve to amazed guests.

Heat a tablespoon of butter and a tablespoon of olive oil in a large pan. Wait until the pan is hot and the butter has fully melted.
