Leftover Turkey Broccoli Stir Fry
One of our family’s favorite year round dishes is Stir Fry. We take whatever we happen to have in the house, toss it in a skillet and serve it over a bed of rice. It’s insanely simple to make, especially if you use prepared sauces. We especially love the La Choy sauces, there’s a huge variety of them for whatever your mood is. As of the writing of this recipe the La Choy sauces are kosher certified and gluten free. So… right after Thanksgiving, Leftover Turkey Broccoli Stir Fry is kind of a no-brainer! You can make it with whatever vegetables you like, like zucchini, mushrooms, peppers and more. The sky is the limit and your ideas are limitless! I’d love to hear what you came up with!

Ingredients
- 3 tablespoons toasted sesame oil
- 4 cups leftover turkey, cut into bite size pieces
- 2 broccoli crowns, florets separated and blanched
- 2 large red peppers, seeded and thinly sliced
- 1 (15-ounce) jar La Choy sauce of your choice
- 1 cup green onion, cut on the bias into 1-inch pieces
- 1 cup dry roasted peanuts
- 2 tablespoons soy sauce
- cooked rice for serving
Instructions
- Heat the toasted sesame oil in a large wok over medium-high heat. Add the turkey and cook, stirring constantly, until lightly browned.
- Add the broccoli and peppers and cook until the broccoli is the desired softness.
- Pour in the whole bottle of sauce and toss to coat all the ingredients. Let simmer over low heat for an additional 5-10 minutes, until heated through.
- Stir in the peanuts and green onion and serve over a bed of cooked rice.

We like our broccoli on the crunchier side, but you can stir fry it as long as you like so it’s the desired softness. Keep it mind that it will continue to cook a little bit after the sauce has been added.
Choose your favorite sauce! We happen to love the Sweet Chili Sauce and the Teriyaki sauce.
If you’re looking to add a little heat, add crushed red pepper to the stir fry to achieve the desired heat.
