Description
Turkey Salad Sandwiches are an awesome way to use up your Thanksgiving turkey leftovers. They’re super simple to make and really delicious. Depending on how much Leftover Turkey Salad you pile on your buns, you can make between two and four sandwiches.
Ingredients
- 2 cups diced leftover turkey
- 1/4 cup mayonnaise (can be light)
- 1 tablespoon Dijon mustard
- 1 /4 cup finely diced celery
- 1 tablespoon diced green onion, plus more for garnish
- 2–4 hot dog/medium baguettes, toasted
- green leaf lettuce, sliced tomatoes, as desired
- (stuffing flavored) potato chips & pickle slices (optional)
Instructions
- Place the diced turkey in a medium sized bowl. Add the mayonnaise, Dijon mustard, salt, pepper and stir until the turkey is completely coated.
- Add the celery and green onion and toss until they’re evenly distributed.
- Divide the salad into 2-4 portions.
- Place a lettuce leaf, then tomatoes on half of the bun/bread. Top with a scoop of the turkey salad and garnish with additional green onion.
- Close the sandwich with the remaining half of the bun/bread. Serve with potato chips and pickle slices.
- Store any remaining salad in the refrigerator for up to one day.
