Description

Southern Green Beans are a classic, comforting dish often found at family gatherings and holiday meals in the South.   They’re simmered slowly with flavorful ingredients until they are tender and infused with delicious smoky notes.  These are perfect for meals in your chilly Sukkah or cool fall dinners.  Southern Green Beans also make great leftovers…if there are any!

Ingredients

  • 3 tablespoons garlic oil (see note)
  • 1 cup sliced green onions
  • 2 pounds fresh green beans, trimmed 
  • 8 small Yukon Gold potatoes, diced
  • 1/4 cup chicken/vegetable broth
  • 6 slices beef fry/Facon OR 1/4-1/2 cup imitation bacon bits
  • 1 1/2 teaspoons white balsamic vinegar (optional)
  • salt and freshly ground black pepper to taste.


Instructions

  1. If using real beef fry/Facon cook in a large skillet/wok until evenly browned, around 8-10 minutes, then remove them from the skillet/wok and drain on a paper towel.
  2. Heat the garlic oil in a large skillet or wok, then add the green onion and sauté until the onions are soft, around 2 minutes. 
  3. Stir in the green beans, potatoes, beef fry/Facon/imitation bacon bits, and broth. 
  4. Bring to a boil, cover and simmer over low heat until the green beans are tender and the potatoes are cooked through, between 10-20 minutes (you need to test the potatoes after 10 minutes).
  5. Sprinkle with vinegar, salt and pepper.  Serve hot or cold.


Notes

If you like to use an actual onion rather than green onion, you can use a whole medium red onion instead of the green onion.  I happen to like the way the green onion tasted in this recipe but it’s up to you.

While I’m not a fresh garlic eater, you can absolutely use 3 tablespoons of margarine/oil and a clove of garlic in this recipe instead of substituting garlic oil.
