Description

Here are my two Favorite One-Pint Ice Cream Recipe Bases.  These recipes are Vegan/Dairy-Free/Pareve.  You can add your favorite mix-ins or flavorings to make them your own!  Make sure to post/send me pictures @koshereveryday!


Ingredients

Basic Vanilla One-Pint Ice Cream (Dairy Free)

  • 1/2 cup dairy free heavy whipping cream (like Rich's Whip)
  • 1/2 cup (oat) vanilla coffee creamer, dairy free
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon xanthan gum (optional)

Basic Chocolate One-Pint Ice Cream

  • 1/2 cup dairy free heavy whipping cream (like Rich's Whip)
  • 1/2 cup (oat) vanilla coffee creamer, dairy free
  • 1/4 cup unsweetened Cocoa Powder
  • 1 teaspoon pure vanilla extract

Instructions

  1. Freeze the bowl of the ice cream maker for at least 24 hours.
  2. Place all the ingredients in a one-pint container with a tight fitting lid.  Place in the refrigerator for at least 1/2 hour.
  3. Remove the container from the refrigerator and pour into the bowl of the ice maker. 
  4. Secure the lid with the churning attachment onto the bowl.  Turn on the machine and allow it to churn for around 20-30 minutes, or until the ice cream thickens to a thick soft serve consistency. 
  5. If adding in additional ingredients, add them at this time and allow the ice cream to churn for an additional 5 minutes.
  6. Serve immediately, or return the ice cream to the original container with the tight fitting lid, and place in the freezer until ready to serve.


Notes

I add xanthan gum to the vanilla ice cream because I found that the consistency is a little more like ice milk without it.  By adding the xanthan gum to the ingredients the ice cream has a creamier consistency.  If you don’t have xanthan gum you can leave it out, but the consistency will be a little different.

  • 1/2 teaspoon pumpkin pie spice

For Peanut Butter Chunk Chocolate Chip Ice Cream

  • Basic Vanilla One-Pint Ice Cream, NO xanthan gum
  • 1/4 cup chunky peanut butter (I use super chunk)

For Lemon Mint Chocolate Chunk Ice Cream

  • Basic Vanilla One-Pint Ice Cream, NO vanilla extract
  • 1/2 – 1 teaspoon pure lemon extract
  • 1 bar mint chocolate candy bar, coarsely chopped (I use Hu, Crunchy Mint Dark Chocolate, 2.1 oz)
