Grilled Kielbasa and Zucchini Penne

Description

Grilled Kielbasa and Zucchini Penne is the perfect combo of smoky, savory goodness and fresh garden vibes. It’s quick, it’s easy, and it’s going to be your new favorite summer pasta dinner. It’s gluten free (optional) and you can even make it plant based, Fire up your grill… It’s grilling time!!!

Ingredients

  • 1 pound gluten free penne, cooked and rinsed
  • 1 pound kielbasa, plastic removed
  • 1 1/22 pounds fresh zucchini
  • 1/4 cup extra virgin olive oil, divided
  • 2 spice packets (around 1/4 cup), divided


Instructions

  1. Preheat your grill to 350°F.
  2. Place the cooked pasta in a large bowl.  Set aside.

For the Zucchini

  1. Cut the stem off of the zucchini and discard.  Slice the zucchini into approximately 1/2-inch disks, then place in a large bowl.
  2. Drizzle 2 tablespoons of olive oil over the zucchini, then sprinkle a whole spice packet over the zucchini.  Mix well until all the zucchini is evenly coated. 

For the Kielbasa

  1. Cut the kielbasa into four pieces, then cut each piece lengthwise in half.
  2. Cut kielbasa

For Grilling

  1. Place the zucchini and kielbasa on the grill.  Grill covered for around 5 minutes, until grill marks appear on the zucchini and the kielbasa is browned.
  2. Flip the zucchini and kielbasa and grill for another 2-3 minutes.
  3. Transfer to a pan or bowl, and allow the zucchini and kielbasa to cool enough to handle.
  4. Slice the kielbasa into half moon slices, then cut each zucchini round in half.
  5. Add the kielbasa and zucchini to the pasta, then drizzle the remaining 2 tablespoons of olive oil and sprinkle a whole spice packet over the bowl contents. 
  6. Stir until all the spices and oil are evenly distributed over the pasta, kielbasa and zucchini.
  7. Quickly serve to your hungry hoard.
