Description

Grilled Chicken Salad with Raspberry Syrup Vinaigrette is still a classic staple. Made with Optimistic Garden fresh ingredients and summery grilled chicken breast, it’s a fresh and delicious salad that’s perfect for dinner or lunch!  You can add the fresh raspberries for an extra fruity flavor.


Ingredients

For the Salad

  • 10 oz romaine lettuce, cut into bite size pieces (you can use more if you like)
  • 2 small avocados, diced
  • 1 cup cherry or grape tomatoes, halved
  • 2 barbecued chicken breasts, shredded into bite size pieces
  • 3 stalks green onions, thinly sliced

For the Raspberry Syrup Vinaigrette Dressing

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons raspberry syrup
  • 2 tablespoons extra virgin olive oil

For the Raspberry Vinegar Honey Vinaigrette Dressing

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons raspberry vinegar
  • 1 tablespoon canola oil
  • 2 tablespoons honey (can add more to taste)

To Finish

  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt
  • 1 pint fresh raspberries (optional)
  • additional cherry tomatoes for garnish (optional)


Instructions

For The Salad

  1. Place the romaine lettuce, avocadoes, chicken, grape tomatoes, and green onions in a large salad bowl.
  2. Toss to combine.

For the Dressing

  1. In a small bowl or measuring cup, combine the balsamic vinegar, raspberry syrup, and extra virgin olive oil.
  2. Stir to combine.

To Finish

  1. Sprinkle the pepper and salt over the salad, then pour the dressing over the salad.
  2. Lightly toss to evenly coat the salad.
  3. For a fruity salad, gently toss the fresh raspberries into the salad.
  4. Serve to your hungry family!


Notes

You can use your favorite dressing on this salad.  It’s super versatile and will be a great base for any dressing.

For a fruity salad, add the fresh raspberries at the end.  You can leave them out if you prefer.

You can add slivered/sliced almonds, sunflower seeds or pecans to this salad for more crunch.

If you like, you can add 1/2 cup of Craisins instead of the raspberries for an alternate version of this great salad.

Depending upon your preferred dressing you can substitute a mesclun mix of lettuce.  Just wait until just before serving to dress the salad.
