Basic Passover Crepe


Ingredients

  • 12 large eggs
  • 3/4 cup potato starch
  • 1 cup water
  • 1 teaspoon salt

Instructions

  1. In a blender (or using an immersion blender), beat eggs.
  2. Add potato starch, water, and salt.
  3. Blend until smooth.
  4. Lightly grease a crepe pan or skillet.
  5. Heat over medium-high heat.
  6. Add 3-4 tablespoons batter and swirl the pan to coat the bottom with a thin layer.
  7. Let cook until crepe is firm and edges appear golden, about 1 minute.
  8. Flip crepe, using a slotted spatula.
  9. Cook for 15 seconds and flip over onto plate.
  10. Repeat with remaining batter, re-greasing pan as necessary.
  11. Stack crepes as they are completed.
