Description
Garden Salad with Strawberries & Edible Flowers is the perfect way to give Mom a bouquet of flowers in a bowl! It’s packed with seasonal ingredients like red leaf lettuce, radicchio, fresh red ripe strawberries bursting with flavor, toasted walnut and a springtime garnishing of edible flowers. Ingredients
For the Dressing
- 1 tablespoon white wine vinegar
- 1 teaspoon dijon mustard
- 3 tablespoons toasted walnut oil
For the Salad
- 6 cups red leaf lettuce, cut into bite size pieces
- 1 small radicchio, cut into bite size pieces
- 2 cups sliced strawberries
- 1/3 cup chopped fresh chives
- 1/4 cup finely chopped toasted walnuts
- Kosher salt and freshly ground pepper to taste
- Edible Flowers, for garnish
- Additional chives and toasted walnuts, for garnish
Instructions
For the Dressing
- In a small bowl, whisk together the vinegar, mustard and walnut oil until smooth. Cover and refrigerate until ready to use.
For the Salad
- In a large bowl toss together the lettuce, radicchio, strawberries, chives and walnuts.
- Just before serving, pour the prepared dressing over the salad and gently toss to coat the salad ingredients.
- Garnish with edible flowers, additional walnuts and chives.

To make toasted walnuts, preheat the oven to 350°F. Line a baking sheet with foil and place around a cup of raw walnuts on the sheet. Bake for around 12 minutes, you should be able to smell the walnuts baking at that point. Allow to cool completely before chopping.
Make sure that your red leaf lettuce and other vegetables are completely dry before adding them to the salad. Wet vegetables will make the salad wilt quickly.
